The tradition of twine binding

At the origins of Prosecco D.O.C.

The choice to seal the bottles with string does not derive from a specific technical motivation, but from the intent to perpetuate a centuries-old tradition that dates back to the very origins of sparkling Prosecco.

Twine is easy to find, cheap and easily fulfills the function for which it is applied: it was used at the time when fermentation took place directly in the bottle, to prevent the pressure from pushing the cork out. An empirical but effective system, which was carried out strictly by hand.

The twine binding is an old tradition, but it’s still highly appreciated today because it represents the symbol of a strong bond with the history of the region and keeps alive the memory of the genuine simplicity of the peasant life of our ancestors.

The advent of sparkling wine in autoclave and the use of new methods for the stabilization of sparkling wines have made this type of fixing superfluous; however, for some products it is still used, for its aesthetic appeal and its sweetly nostalgic flavor.

Also in the Follador range there are two sparkling wines that hand down this old custom of twine tying: Prosecco D.O.C. Treviso and the “Vita Rosa” Rosé.

The first represents a pillar of the Company and a typical expression of the region; it is obtained from selected D.O.C. and contains all the taste and aroma of Prosecco. It has an excellent structure which is expressed in a very pleasant accord between freshness and flavor; uncorking it after having untied the string is a moment of great sharing and joy in every convivial meeting.

The “Vita Rosa” Rosé has a fine and persistent perlage, and its fruity and floral bouquet makes it an excellent aperitif, as well as making it ideal for pairing with light dishes based on fish or vegetables. Also in this case, we have maintained the tradition of twine tying  because it, too, symbolizes the meticulous care with which we produce our Prosecco and our sparkling wines, from the harvest to the magical moment when a piece of string becomes a seal of unsurpassed quality.
